I freeze the loaf when it arrives, and after fully frozen, I then vacuum seal either one or two slices per vacuum sealed package, and then return it to the freezer. When thawed out, I clip the corner of the vacuum bag, the seal is broken, and I let the bread thaw at room temperature. The vacuum process seems to slightly flatten the bread (even when frozen). But when it thaws, it fluffs right back out to the normal size.
